YOGI PANCAKES

A healthy variation of the traditional pancake! (serves 1)

Ingredients ~

1 banana (mashed)

2 eggs (whisked)

1/2 tsp cinnamon 

1 tsp coconut oil

Topping ideas ~

Fruit ~ berries, banana, fig, dates

Nuts ~ walnuts, flaked almonds, nut butters
Seeds ~ pumpkin, hemp, flax, sunflower, chia, tahini

Method ~

1. Combine the eggs, banana and cinnamon in a bowl, mix together or use a blender

2. Pop the coconut oil into a small frying pan, heat until melted

3. Add the pancake mixture, heat for a minute or two

4. Transfer to a medium heated grill, cook until golden 

5. Pop the pancake onto a plate and top with berries, nuts and seeds of choice

6. Enjoy!
